A crunchy and creamy Apple Broccoli Salad featuring sweet Honeycrisp apples, fresh broccoli, and a tangy dressing.

  • 2 cups broccoli florets
  • 2 Honeycrisp apples, diced
  • 1/2 cup nuts (walnuts or almonds)
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Prep the broccoli: Start by rinsing your broccoli florets under cold water. Trim off woody stems and cut into bite-sized pieces.
  2. Dice those apples: Wash the Honeycrisp apples, slice into quarters, remove the core, and dice into chunks. Toss with lemon juice to prevent browning.
  3. Toast the nuts (optional): Heat a dry skillet over medium heat, add the nuts, and stir frequently for 5-7 minutes until golden brown.
  4. Combine the dressing: In a mixing bowl, combine Greek yogurt (or mayo), honey, and apple cider vinegar. Stir until smooth. Season with salt and pepper.
  5. Mix it all together: In a large bowl, toss broccoli, apples, and nuts. Pour dressing over and gently fold until well-coated.
  6. Chill & serve: Let the salad chill in the fridge for 20-30 minutes before serving for the best flavor.

Notes

Can be made ahead; keep dressing separate until serving to maintain broccoli crispness.
