Heavenly Apple Cider Muffins

Delightful apple cider muffins flavored with seasonal spices, perfect for fall.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon apple pie spice
  • 1 cup apple cider
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a muffin tin with paper liners or non-stick spray.
  3. Mix the dry ingredients: flour, sugar, baking powder, baking soda, salt, and apple pie spice.
  4. Combine the wet ingredients: apple cider, vegetable oil, eggs, and vanilla extract, and whisk until smooth.
  5. Bring the wet ingredients into the dry mixture, folding gently.
  6. Portion out the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18–20 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

These muffins can be served warm with a pat of butter or dusted with powdered sugar.
