Authentic Jamaican Curry Chicken

Experience the vibrant flavors of Jamaica with this authentic curry chicken recipe, simmered in a creamy coconut sauce and packed with aromatic spices.

  • 1.5 lbs chicken, cut into pieces
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 23 hot peppers, chopped
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping chicken, onion, garlic, and hot peppers. Optionally, marinate the chicken with curry powder, salt, and pepper for 30 minutes.
  2. Sauté the onions in olive oil over medium heat until translucent, about 4-5 minutes. Then add garlic and hot peppers; stir for another minute.
  3. Add the chicken to the pan and cook for 5-7 minutes until lightly browned.
  4. Sprinkle the curry powder over the chicken and stir for another 2-3 minutes.
  5. Pour in chicken stock and coconut milk, stirring to combine. Bring to a gentle simmer, cover, and reduce heat to low for about 20 minutes.
  6. Taste and adjust seasoning as needed.
  7. Remove from heat and let it rest for a few minutes before serving.

Notes

Serve over fluffy white rice or coconut rice. Garnish with fresh cilantro or scallions for added color.
