Buffalo Chicken Lettuce Wraps

  • 2 large chicken breasts (cooked and shredded)
  • 2 tablespoons butter
  • ½ tablespoon olive oil
  • ½ cup Frank’s Red Hot Wing Sauce
  • ½ teaspoon celery seed
  • Fresh pepper to taste
  • ½ cup thinly sliced celery
  • Blue cheese crumbles
  • Ranch dressing
  • 2 heads of lettuce (romaine or iceberg, rinsed and patted dry)

Instructions

  1. Cook the Chicken: If you’re using raw chicken breasts, season them with salt and pepper. In a medium saucepan, combine the chicken with enough water to cover. Bring to a boil, then let it simmer on low for about 15-20 minutes until cooked through. You can also use leftover rotisserie chicken to skip this step!
  2. Shred the Chicken: Once the chicken has cooled a bit, use two forks to shred it. Try not to eat it all; save some for the wraps!
  3. Heat the Sauce: In a skillet, melt the butter with olive oil over medium heat. Add the Frank’s Red Hot Wing Sauce, celery seed, and fresh pepper. Stir until combined, and the mixture is heated through — about 2 minutes.
  4. Combine: Add the shredded chicken to the skillet and mix well, ensuring that every piece is coated in that luscious sauce. Cook for an additional 3 minutes for the flavors to meld.
  5. Prep the Lettuce: While the chicken is heating, carefully wash and dry your heads of lettuce. You want sturdy leaves that will hold all this filling goodness without falling apart!
  6. Assemble the Wraps: Grab a leaf of lettuce and spoon a generous amount of the buffalo chicken mixture in the center. Top with sliced celery, a sprinkle of blue cheese crumbles, and a drizzle of ranch dressing.
  7. Serve and Enjoy: Fold the lettuce over the filling, take a big bite, and relish in that crunchy, spicy delight!
