  • 3 cloves of garlic
  • 4 cups of vegetable or chicken broth
  • 1 cup of heavy cream
  • Salt and pepper, to taste

Instructions

  1. Prepare the cauliflower: Begin by ripping the cauliflower into smaller florets.
  2. Sauté the onion and garlic: In a large pot, heat a splash of olive oil over medium heat. Add diced onion and a pinch of salt, cooking until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Add the cauliflower and broth: Toss cauliflower florets into the pot and stir to combine. Pour in the broth, ensuring it covers the veggies. Bring to a gentle simmer, then cover and cook until tender, about 15 minutes.
  4. Blend the soup: Once the cauliflower is fork-tender, carefully transfer the mixture to a high-speed blender. Blend until silky smooth, adding the cream as you blend.
  5. Return to the pot: Pour the blended soup back into the pot and stir over low heat. Taste and adjust seasoning.
  6. Final touches: Drizzle more cream on top before serving and garnish with freshly chopped herbs.
