1 medium onion

4 cups of vegetable or chicken broth
1 cup of heavy cream

Instructions
Prepare the cauliflower: Begin by ripping the cauliflower into smaller florets.
Sauté the onion and garlic: In a large pot, heat a splash of olive oil over medium heat. Add diced onion and a pinch of salt, cooking until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
Add the cauliflower and broth: Toss cauliflower florets into the pot and stir to combine. Pour in the broth, ensuring it covers the veggies. Bring to a gentle simmer, then cover and cook until tender, about 15 minutes.
