Chicken Corn Chowder

A comforting and creamy Chicken Corn Chowder that wraps you in flavor and warmth, perfect for chilly evenings.

  • 2 cups Chicken, cooked and shredded
  • 2 cups Corn, fresh or frozen
  • 2 medium Potatoes, diced
  • 1 cup Heavy cream
  • 4 cups Chicken broth
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Fresh herbs (like thyme or parsley, for garnish)

Instructions

  1. Prep your ingredients: Chop the onion and garlic, and dice the potatoes. If using fresh corn, slice it off the cob.
  2. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, and sauté until soft and translucent (about 5 minutes). Stir in the garlic, and cook for another minute until fragrant.
  3. Add the broth and potatoes: Pour in the chicken broth and bring it to a gentle simmer. Add the diced potatoes and cook until fork-tender (about 10-12 minutes).
  4. Incorporate the corn and chicken: Once the potatoes are cooked, stir in the corn and shredded chicken. Let it simmer for another 5-10 minutes.
  5. Add cream and season: Pour in the heavy cream, stirring to combine. Taste and season with salt and pepper.
  6. Finish and serve: Off the heat, stir in fresh herbs, let it sit for a few minutes, then serve hot.

Notes

For added flavor, feel free to toss in diced bell peppers, add a pinch of cayenne, or experiment with fresh herbs.
