Chicken Parmesan Soup

A comforting soup that combines the flavors of chicken parmesan with a hearty broth, perfect for chilly evenings.

  • 2 cups Chicken Breast, cooked and shredded
  • 4 cups Marinara Sauce
  • 1 cup Parmesan Cheese, shredded
  • 1 cup Pasta, uncooked
  • 4 cups Chicken Broth
  • 2 teaspoons Italian Seasoning
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil

Instructions

  1. Sauté the aromatics by heating the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  2. Add the shredded chicken and pour in the chicken broth. Bring this to a gentle simmer.
  3. Incorporate the marinara sauce and stir, scraping the bottom of the pot to release any delicious bits.
  4. Mix in the uncooked pasta. Stir and let it bubble away on medium heat, uncovered, for about 10 minutes.
  5. Season to perfection by sprinkling in the Italian seasoning and stirring in half of the Parmesan cheese. Taste and adjust seasoning.
  6. Finish it off by ladling the soup into bowls and topping generously with the remaining Parmesan cheese.

Notes

This soup can be frozen and reheated for later. Add a splash of broth when reheating if needed.
