  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the Chicken: Season with salt, pepper, and smoked paprika. Grill or roast until cooked through, about 6-7 minutes per side, then dice.
  2. Cook the Corn: Grill fresh corn until charred (about 10 minutes) or boil until tender; let cool and slice off the kernels.
  3. Prep the Veggies: Dice cucumber and chop red onion, mixing in a large bowl.
  4. Mix the Dressing: Combine mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and pepper. Whisk until smooth.
  5. Combine and Blend: Add chicken, corn, and dressing to the veggie bowl. Fold everything together gently.
  6. Chill Before Serving: Refrigerate for at least 30 minutes to meld flavors.
