Soul-Warming Tomato Basil Soup

  • 1 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • ½ cup heavy cream (or coconut milk)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cups vegetable or chicken broth (optional)

Instructions

  1. Prepare your ingredients: Rinse the tomatoes and basil, then dice the tomatoes into quarters.
  2. Sauté the aromatics: Heat olive oil in a pot, add garlic, and sauté until fragrant.
  3. Cook the tomatoes: Add diced tomatoes to the pot, stirring for about 10 minutes.
  4. Add your broth: Pour in broth (if using), bring to a boil, then simmer for another 15-20 minutes.
  5. Blend the soup: Use an immersion blender to purée until smooth.
  6. Stir in the cream: Return to heat, mix in cream, and adjust seasoning as desired.
  7. Add fresh basil: Stir chopped basil into the soup before serving.
