Garlic Scape Pesto

A vibrant and flavorful garlic scape pesto that elevates any dish, perfect for pasta, sandwiches, and more.

  • 12 Garlic Scapes, rinsed and tough ends removed
  • 1/2 cup Extra Virgin Olive Oil
  • 1/4 cup Pine Nuts (or Walnuts), toasted
  • 1/2 cup Parmesan Cheese, grated
  • Salt, to taste
  • Fresh Black Pepper, to taste

Instructions

  1. Prep Your Scapes: Start by rinsing the garlic scapes under cool running water to remove any dirt. Cut off the tough ends—about an inch from the bottom.
  2. Toast Your Nuts: Preheat a skillet over medium heat, adding the pine nuts without any oil. Toss them for about 3-4 minutes until golden.
  3. Blend Ingredients Together: In a food processor, combine the garlic scapes, toasted pine nuts or walnuts, and grated Parmesan cheese. Blend until you have a rough paste.
  4. Add Olive Oil: While the processor is running, drizzle in your olive oil until you reach the desired consistency.
  5. Season to Taste: Scrape down the sides, add salt and pepper to taste, and blend again.
  6. Taste and Adjust: Taste your pesto and adjust flavors as desired.

Notes

Freeze leftovers in ice cube trays for easy use later. To keep it fresh, drizzle olive oil on top before sealing.
