Ground Turkey Sweet Potato Bowl

A comforting and nutritious bowl made with ground turkey, sweet potatoes, and optional broccoli, perfect for busy weeknights.

  • 1 lb Ground Turkey
  • 2 Medium Sweet Potatoes, diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Pepper to taste
  • 1 cup Broccoli Florets (optional)
  • 1 Avocado, sliced (for topping)
  • Chopped Green Onions (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare sweet potatoes by dicing them into even cubes and tossing with half of the olive oil, salt, pepper, and half of the paprika. Lay them out on a baking sheet.
  3. Bake for 25-30 minutes, flipping halfway.
  4. In a large skillet, heat remaining olive oil over medium heat and add ground turkey, breaking it into smaller pieces. Season with garlic powder, remaining paprika, salt, and pepper.
  5. Cook until browned, about 7-10 minutes, adding broccoli during the last 3-4 minutes if using.
  6. Assemble your bowl starting with turkey, then sweet potatoes, broccoli, and avocado slices.
  7. Garnish with chopped green onions and desired sauces.
