Healthy Street Corn Salad

A vibrant and zesty salad combining fresh corn, cherry tomatoes, and creamy Greek yogurt for a healthy twist on classic street corn.

  • 2 cups corn kernels (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Start by prepping your corn. Stand the cob on a cutting board and carefully slice off the kernels with a sharp knife.
  2. In a large bowl, combine your corn and diced red onion.
  3. Add halved cherry tomatoes and chopped cilantro to the mix.
  4. In a small bowl, whisk together the Greek yogurt, lime juice, chili powder, salt, and pepper.
  5. Drizzle the yogurt mixture over the corn and veggie mix.
  6. Let your salad sit for at least 10 minutes.
  7. Taste and adjust!
  8. Serve it up!

Notes

This salad can be made ahead of time, just add dressing before serving for best freshness.
