Homemade Italian Wedding Soup

A comforting Italian Wedding Soup filled with turkey meatballs, fresh spinach, and flavorful broth.

Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped parsley
  • 1 egg
  • Pinch of salt and pepper
  • 1 tablespoon olive oil (for browning)
  • 1 chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon Italian seasoning
  • 8 cups chicken or vegetable broth
  • 1 cup small pasta (acini di pepe or orzo)
  • 4 cups fresh spinach

Instructions

  1. Prepare the meatballs by mixing ground turkey, breadcrumbs, Parmesan, parsley, egg, salt, and pepper in a bowl.
  2. Form bite-sized meatballs and place them on a baking sheet.
  3. Brown the meatballs in a pot with olive oil until golden (optional).
  4. Build the soup base by sautéing onion, garlic, and Italian seasoning in the same pot.
  5. Pour in the broth and bring to a simmer, then add the browned meatballs.
  6. Add pasta to the soup and cook until al dente.
  7. Stir in the spinach until wilted and season as desired.

Notes

For a vegetarian option, swap meatballs with chickpeas or lentils. You can also replace turkey with beef or pork.
