  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley
  • Pinch of salt and pepper
  • Olive oil for cooking
  • ¼ cup diced onion
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (like Acini di Pepe or Orzo)
  • 4 cups fresh spinach

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground turkey, egg, breadcrumbs, Parmesan cheese, minced garlic, fresh parsley, and a pinch of salt and pepper. Mix using your hands.
  2. Shape the Meatballs: Form the mixture into bite-sized meatballs, about 1 inch in diameter, yielding 20-24 meatballs.
  3. Cook the Meatballs: Heat a large pot over medium heat, add olive oil, and brown the meatballs on all sides for 5-7 minutes.
  4. Remove and set aside the meatballs.
  5. Sauté Aromatics: In the same pot, add more olive oil if needed, toss in diced onion and minced garlic, and sauté for 3-4 minutes until softened.
  6. Add Broth: Pour in the broth, scraping the pot, and bring to a gentle boil.
  7. Return the meatballs to the pot and simmer for 10 minutes.
  8. Stir in the pasta and cook for 8-10 minutes until al dente.
  9. Incorporate spinach: Stir in fresh spinach and cook for 2-3 minutes until wilted.
  10. Adjust seasoning to taste and serve hot.

Notes

For a twist, add a splash of balsamic vinegar for extra flavor. This soup can be made in advance and reheats beautifully. Consider omitting pasta for freezing, adding it only when serving.
