Zesty Lemon Parmesan Couscous

A bright and flavorful couscous dish with lemon and Parmesan, perfect as a side or main.

Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice (adjust to taste)
  • 0.5 cup Parmesan cheese
  • 0.5 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Prepare the couscous by bringing vegetable broth to a boil, then adding couscous and removing from heat. Cover and let sit for about five minutes.
  2. Fluff the couscous gently with a fork.
  3. Sauté the garlic in olive oil over medium heat until fragrant and golden, about 1-2 minutes.
  4. Incorporate the lemon zest and juice into the garlic and oil mixture, simmering for about a minute.
  5. Mix the lemon-garlic mixture with the fluffed couscous.
  6. Fold in the Parmesan cheese, seasoning with salt, pepper, and red pepper flakes.
  7. Garnish with extra lemon zest or fresh herbs before serving.

Notes

This dish can be served as a side with grilled chicken or as a warm salad topped with arugula and cherry tomatoes.
