Lemon Raspberry Bars

Deliciously sweet and tangy Lemon Raspberry Bars with a buttery crust, perfect for any occasion.

  • 2 cups raspberries (fresh or frozen)
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 3/4 cup fresh lemon juice
  • 1 cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking pan by lining it with parchment paper.
  3. Mix the crust ingredients: In a large mixing bowl, combine flour, 1/2 cup of sugar, and a pinch of salt. Add melted butter and stir until crumbly.
  4. Press the dough firmly into the bottom of the prepared pan, about 1/4-inch thick.
  5. Bake the crust for about 15-20 minutes until lightly golden.
  6. Combine your filling ingredients in a medium bowl and whisk until smooth.
  7. Add the raspberries and gently fold them in.
  8. Pour the filling over the baked crust.
  9. Bake again for 20-25 minutes, until the filling is set and edges are slightly golden.
  10. Let cool completely on a wire rack.
  11. Chill in the refrigerator for at least two hours before slicing.
  12. Dust with powdered sugar before serving.

Notes

Serve with a dollop of whipped cream or vanilla ice cream for an indulgent treat.
