The Ultimate Loaded Baked Potato Soup

A cozy and flavorful baked potato soup loaded with crispy bacon, cheddar cheese, and fresh green onions, perfect for weeknight dinners.

  • 6 large russet potatoes, chopped
  • 8 slices of bacon
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 bunch green onions, chopped
  • 6 cups chicken or vegetable stock

Instructions

  1. Wash the potatoes thoroughly, then peel and chop into 1-inch cubes.
  2. Cook the bacon in a large pot over medium heat until crispy, around 8-10 minutes.
  3. Remove the bacon and let it drain on paper towels, leaving a bit of bacon fat in the pot.
  4. Sauté onions (if using) in the bacon fat for about 2-3 minutes until tender.
  5. Add chopped potatoes to the pot, stirring to coat in the bacon fat.
  6. Pour in the stock until it covers the potatoes; bring to a gentle boil.
  7. Simmer for 15-20 minutes or until the potatoes are fork-tender.
  8. Mash some of the potatoes to create a creamy texture, leaving some chunks for bite.
  9. Stir in cheddar cheese and crumbled bacon until the cheese melts.
  10. Serve into bowls, topping with extra cheese, bacon, and green onions.

Notes

This soup can be made vegetarian by using vegetable stock and substituting bacon with smoked tempeh. Serve with crusty bread for dipping.
