Mango Crumble Bars

Delicious and nostalgic Mango Crumble Bars packed with juicy mangoes and topped with a buttery crumble.

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 ripe mangoes, peeled and diced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish lined with parchment paper.
  3. Make the crumble mixture by combining flour, brown sugar, granulated sugar, baking powder, and salt in a large mixing bowl.
  4. Add in the softened butter and mix until crumbly.
  5. Reserve about 1 cup of this mixture for topping later.
  6. Press the remaining crumble mixture firmly into the bottom of the prepared baking dish to form the crust.
  7. Prepare the mango filling by combining diced mangoes and lemon juice in a separate bowl.
  8. Layer the mango mixture evenly over the crust.
  9. Top with the reserved crumble mixture over the mango layer.
  10. Bake for about 30 to 35 minutes until golden brown and bubbly.
  11. Cool for 15 minutes before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat.
