Nectarine Spice Butter

  • 9 cups ripe nectarines, chopped
  • 4 cups sugar
  • 1/4 cup lemon juice
  • 1 tablespoon butter
  • 1 tablespoon cinnamon

Instructions

  1. Prep your nectarines by washing, slicing, removing the pits, and chopping them into small pieces.
  2. Combine the chopped nectarines, sugar, lemon juice, and cinnamon in a large pot.
  3. Cook on medium heat, stirring occasionally, until the nectarines are soft and bubbly, about 20-25 minutes.
  4. Blend the mixture with an immersion blender until reaching your desired consistency.
  5. Return the pot to low heat and stir in the butter, cooking for another 5-10 minutes.
  6. Check for consistency by placing a spoonful on a plate and refrigerating for a few minutes. If too thin, continue cooking until thickened.
  7. Jar the Nectarine Spice Butter into clean, sterilized jars.
  8. Seal and allow to cool completely before refrigerating.
