Quick and Easy Cherry Crumb Cake

A delightful blend of buttery cake, sweet and tart cherry filling, and a crispy crumb topping, perfect for any occasion.

  • 1 can cherry pie filling
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch baking pan.
  2. Combine 1 cup of flour, 1 cup of sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of salt in a bowl.
  3. Cream 1/2 cup of softened butter with the sugar mixture until light and fluffy.
  4. Add 1 egg and 1 teaspoon of vanilla extract, mixing until smooth.
  5. Gradually mix the dry ingredients with the wet mixture, alternating with the cherry pie filling.
  6. Mix 1/2 cup oats, 1/2 cup of flour, and 1/2 cup of softened butter in a bowl until crumbly for the topping.
  7. Pour half of the batter into the pan, followed by half of the cherry filling, and repeat the layers.
  8. Sprinkle the crumb topping over the top layer.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

For variations, try mixed berries instead of cherries or add nuts to the topping.
