Pumpkin Chip Banana Bread

A delightful mashup of banana goodness with pumpkin and chocolate chips, perfect for fall baking.

Ingredients

  • 3 very ripe bananas, mashed (approx. 1 1/2 cups)
  • 1 large egg
  • 2/3 cup pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 5 tablespoons butter, melted and cooled
  • 1/3 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup chocolate chips
  • 1/21 teaspoon pumpkin pie spice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash the bananas in a large bowl with melted butter.
  3. Add the egg, pumpkin puree, and vanilla extract and mix until blended.
  4. Combine dry ingredients in a separate bowl and whisk together.
  5. Mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips gently.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55-65 minutes until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes before transferring to a wire rack.

Notes

Great served warm with a drizzle of honey or maple syrup. The bread also freezes well!
