20-Minute Roasted Zucchini

A quick and flavorful side dish featuring roasted zucchini seasoned with garlic and herbs, ready in just 20 minutes.

  • 4 small zucchini (quartered lengthwise)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • ½ teaspoon dried basil
  • ½ teaspoon seasoned salt
  • ½ teaspoon dried Italian seasoning
  • ⅛ teaspoon salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse your zucchini under cold water to clean them, then cut into quartered spears.
  3. Combine the zucchini, olive oil, garlic, basil, seasoned salt, Italian seasoning, and salt in a mixing bowl.
  4. Spread the zucchini in a single layer on a parchment-lined baking sheet.
  5. Roast in the oven for 15–20 minutes, tossing halfway through for even browning.
  6. Check the doneness after 15 minutes; edges should be crisp and tender inside.
  7. Serve warm as a side dish or topping for grain bowls.

Notes

Try adding red pepper flakes for a spicy kick, or top with grated parmesan cheese for a cheesy finish.
