Chicken Fajita Soup

A cozy and flavorful Chicken Fajita Soup that combines classic fajita flavors in a warm broth, perfect for comfort on chilly nights.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 3 colorful bell peppers (red, yellow, green), diced
  • 1 packet fajita seasoning
  • 1 can black beans or pinto beans, drained
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes
  • 1 onion, diced
  • 1 cup corn (optional)
  • Garnishes: avocado, cilantro, lime, sour cream or Greek yogurt

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add diced chicken and season with half of the fajita seasoning. Sauté until golden and cooked through, about 6-7 minutes.
  2. Remove the chicken and set aside. In the same pot, add more olive oil if needed, toss in chopped onions and bell peppers (and corn if using), and sprinkle remaining fajita seasoning. Sauté for about 5-7 minutes until tender.
  3. Return the chicken to the pot, pour in chicken broth and diced tomatoes, and add beans. Stir well and bring to a gentle boil.
  4. Reduce heat and let the soup simmer for about 15-20 minutes, allowing flavors to meld.
  5. Serve in bowls and top with avocado, lime, cilantro, and sour cream.

Notes

This soup can be made ahead of time and stores well in the fridge for 3-4 days. Adjust spices according to taste if needed.
