Heartwarming Chicken Noodle Soup

A comforting and nourishing chicken noodle soup, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • Bone-in, skin-on chicken (or skinless chicken breasts)
  • 6 cups cold water
  • Salt and pepper to taste
  • 1 bay leaf
  • Whole peppercorns
  • Diced carrots
  • Diced celery
  • Egg noodles (or gluten-free rice noodles/qinoa)
  • Homemade or store-bought chicken broth (or vegetable broth for vegetarian version)
  • Chopped fresh parsley

Instructions

  1. Start by adding your chicken to a large pot. Cover it with cold water and season generously with salt and pepper.
  2. Place the pot on medium-high heat and bring it to a simmer. Skim off any foam that rises to the top.
  3. Let the chicken simmer for about 25–30 minutes or until cooked through.
  4. Once the chicken is cool enough to handle, remove it from the pot and shred it with two forks.
  5. In the same pot, add diced carrots and celery, cooking for about 5-7 minutes until softened.
  6. Stir in the egg noodles and cook according to package directions.
  7. Add the shredded chicken back to the pot with any accumulated juices.
  8. Taste and adjust seasoning.
  9. Just before serving, stir in chopped parsley for freshness.

Notes

This soup can be frozen, but leave out the noodles to prevent mushiness upon thawing.
