Chicken Parmesan Soup

A comforting soup that encapsulates the flavors of classic chicken parmesan, easy to make for a weeknight meal.

  • 4 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups your favorite pasta (like penne or orecchiette)
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried Italian herbs (or a bay leaf)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by shredding the cooked chicken.
  2. Sauté the garlic in olive oil over medium heat for about 1 minute.
  3. Add the marinara sauce and chicken broth, stirring to combine.
  4. Simmer with dried herbs for about 5-10 minutes.
  5. Incorporate your pasta and cook according to package instructions until al dente.
  6. Finish by adding the shredded chicken and stirring gently.
  7. Turn off the heat and stir in grated Parmesan cheese.
  8. Serve in bowls, topping with additional Parmesan if desired.

Notes

For a spicy kick, add red pepper flakes while simmering. For added nutrition, incorporate chopped spinach or kale.
