Tuscan White Bean Soup

A comforting Tuscan White Bean Soup filled with creamy white beans, vibrant spinach, and ripe tomatoes in a savory broth.

  • 2 cups White Beans (cannellini or great northern)
  • 2 cups Fresh Spinach
  • 12 cups Diced Tomatoes
  • 46 cups Vegetable or Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 Chopped Onion
  • 34 cloves Minced Garlic
  • 1 teaspoon Fresh Thyme
  • 1 teaspoon Fresh Rosemary
  • Salt and pepper to taste
  • Freshly Grated Parmesan Cheese (optional)

Instructions

  1. Prep the Beans: If using dried beans, soak them overnight in plenty of water. The next day, drain and rinse them. In a large pot, cover the beans with fresh water and bring to a boil. Reduce to a simmer and cook until tender, about 60 minutes.
  2. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft, about 5-7 minutes. Add minced garlic and sauté for another minute until fragrant.
  3. Add the Tomatoes: Stir in diced tomatoes and cook down for about 5 minutes until they start to break down.
  4. Incorporate the Beans and Broth: If you used dried beans, add them along, with broth. If using canned beans, add them with the broth. Bring to a gentle simmer and let bubble for 20-30 minutes.
  5. Introduce the Greens: Add fresh spinach, stirring until it wilts.
  6. Finish and Serve: Simmer for another 5 minutes, drizzle olive oil on top and sprinkle with Parmesan cheese before serving.

Notes

Feel free to experiment with different beans, herbs, or add protein like Italian sausage for a heartier soup.
