Peach Pie Enchiladas

Transform summer peaches into a comfort food masterpiece with these enchiladas, baked in a buttery cinnamon sauce.

  • 6 (8-inch) flour tortillas
  • 1 (21 oz.) can peach pie filling
  • 3 teaspoons ground cinnamon
  • ¼ cup water
  • ½ cup salted butter
  • ⅓ cup granulated sugar
  • ⅓ cup light brown sugar, packed
  • ¼ cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your sauce: melt the butter in a medium saucepan over medium heat, then add the sugars, water, and cinnamon. Stir until combined.
  3. Fill the tortillas with about ⅓ cup of peach pie filling in the center and roll them up tightly.
  4. Arrange the rolled tortillas seam-side down in a 9×13-inch baking dish and spread a thin layer of the sauce in the bottom.
  5. Drizzle the remaining sauce over the enchiladas.
  6. Sprinkle a mixture of reserved granulated sugar and cinnamon over the top.
  7. Bake for 25-30 minutes or until bubbly and golden.
  8. Cool for a few moments before serving with ice cream or whipped cream.

Notes

For variety, try substituting different fruit fillings or adding spices to the sauce.
