Roasted Cherry Brownies

Indulge in the gooey decadence of roasted cherry brownies, bursting with rich chocolate and sweet caramelized cherries.

  • 1 cup fresh cherries, pitted and halved
  • 1 cup chocolate chips
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the cherries evenly on it. Roast for about 15-20 minutes until caramelized.
  2. Melt the butter and chocolate chips together in a saucepan over low heat until smooth.
  3. Combine the granulated sugar and brown sugar with the melted mixture, then whisk in the eggs one at a time.
  4. Add the vanilla extract and stir until mixed.
  5. Whisk together the flour, cocoa powder, salt, and baking powder in another bowl. Gradually fold into the wet mixture.
  6. Fold in the roasted cherries and remaining chocolate chips.
  7. Pour the batter into a greased 9×13-inch baking pan and bake for 25-30 minutes until a toothpick inserted comes out with moist crumbs.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

For a vegan option, substitute the eggs with flax eggs. You can also use coconut oil instead of unsalted butter for a dairy-free alternative.
