Salted Caramel Apple Pie Cookies

  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour, spooned & leveled (390 grams)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 4 large apples, peeled and diced (775 grams or 27 ounces)
  • 1/4 cup salted butter, cubed (4 tbsp)
  • 2 tbsp apple cider
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar (206 grams)
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 2 and 3/4 tsp cinnamon
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together salted butter, granulated sugar, and brown sugar in a mixing bowl until light and fluffy—about 2-3 minutes.
  3. Add vanilla extract and eggs, mixing well until incorporated.
  4. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves in a separate bowl.
  5. Combine dry ingredients with creamed mixture until just mixed. Do not overmix!
  6. Dice apples into small pieces, then cook in a skillet with butter, apple cider, brown sugar, and spices for about 5-7 minutes until softened.
  7. Let the apple mixture cool before folding it into the cookie dough.
  8. Scoop cookie mounds onto the baking sheet a few inches apart.
  9. Bake for 10-12 minutes, until edges are golden brown.
  10. Make the salted caramel sauce by dissolving granulated sugar and butter, adding heavy cream and a pinch of salt until smooth.
  11. Drizzle salted caramel over cooled cookies and let cool completely.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent dessert.
