Southwest Chicken Wrap

A flavorful and easy-to-make wrap, packed with succulent chicken, fresh vegetables, and a zesty kick.

  • 2 cups cooked chicken, shredded
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. Prepare your chicken by shredding it into a large bowl, seasoning with salt, pepper, and optional cumin.
  2. Mix the filling by adding corn, black beans, bell pepper, avocado, cilantro, and lime juice to the chicken and combine gently.
  3. Assemble your wraps by laying a tortilla flat and placing chicken mixture in the center.
  4. Fold the sides of the tortilla and roll tightly from the bottom up.
  5. Get it toasty by placing the wrap seam-side down on a hot skillet, cooking for 2-3 minutes per side.
  6. Slice the wraps in half diagonally and serve with lime wedges.

Notes

Feel free to customize the wrap with additional veggies or proteins. Perfect for meal prep as the filling can be made ahead of time.
