Strawberry Yogurt Muffins

Delicious Strawberry Yogurt Muffins that are perfect for breakfast, a snack, or dessert.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh strawberries, hulled and diced
  • 2 tablespoons all-purpose flour for coating strawberries
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together your dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. Prepare the strawberries by tossing them with flour in a separate bowl.
  4. Combine the wet ingredients: eggs, yogurt, oil, and vanilla extract until smooth.
  5. Mix the wet and dry ingredients gently until just combined, then fold in the strawberries.
  6. Fill the muffin tin with batter about 3/4 full.
  7. Sprinkle the tops with coarse sugar.
  8. Bake for 18-22 minutes, or until golden brown.
  9. Cool the muffins for 5 minutes in the tin, then transfer to a wire rack.

Notes

Store muffins in an airtight container for up to three days or freeze for later.
