Thai Peanut Chicken Wraps

A vibrant and flavorful wrap filled with chicken, fresh vegetables, and a creamy peanut dressing, perfect for busy weeknights or casual gatherings.

  • ½ cup natural, creamy peanut butter
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 12 teaspoons sriracha sauce (to taste)
  • Water (to thin dressing)
  • 3 cups cooked chicken breast, chopped
  • 3 cups coleslaw mix
  • 1 cup grated carrots
  • ½ cup fresh cilantro, chopped
  • ½ cup roasted peanuts, roughly chopped
  • 6 large flour tortillas

Instructions

  1. Mix all ingredients for the peanut dressing in a medium bowl until smooth, then set aside.
  2. Season fresh chicken and cook it until fully cooked, chop into bite-sized pieces.
  3. Combine the coleslaw mix, grated carrots, and chopped cilantro in a large bowl.
  4. Take a tortilla and layer with chicken, coleslaw mixture, and drizzle with peanut dressing, then roll tightly.
  5. Slice the assembled wraps diagonally and serve with extra peanut dressing.

Notes

Great served with crispy baked sweet potato fries or a zesty cucumber salad. Diced mango or pineapple can also be added for a sweet twist.
