Chopped Italian Grinder Sandwich

A delicious blend of savory cured meats, creamy cheese, and fresh veggies on crusty Italian bread.

  • 1 Italian bread or hoagie roll
  • 5 slices of salami
  • 5 slices of capicola
  • 5 slices of mortadella
  • 3 slices of provolone cheese
  • 1 cup romaine or iceberg lettuce
  • 1 medium tomato, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup dill pickles, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep your ingredients by gathering all components and slicing the bread lengthwise.
  2. Layer on the meats starting with salami, followed by capicola and mortadella.
  3. Add provolone cheese on top of the meats.
  4. Don’t forget to layer in the veggies: lettuce, tomato, red onion, and pickles.
  5. Drizzle the dressing mixture of olive oil, vinegar, oregano, salt, and pepper over the veggies.
  6. Close the sandwich by bringing the top half over the bottom and pressing down gently.
  7. Toast the sandwich in a skillet or panini press for 2-3 minutes on each side if desired.
  8. Slice the sandwich in half on a diagonal and serve.

Notes

For variations, try a vegetarian option or add spices for extra heat. Serve with chips or salad.
