A flavorful and fun snack perfect for parties or quick meals, these Vegetable Tortilla Roll-Ups are colorful and easy to make.

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 (1-ounce) packet Ranch seasoning mix
  • 1 teaspoon dried dill weed
  • 1 cup shredded cheddar cheese
  • 2 cups chopped vegetables (carrots, bell peppers, broccoli, cauliflower, red onion, or olives)
  • ¾ cup shredded carrots
  • ¾ cup finely chopped broccoli
  • ½ cup chopped red bell peppers
  • 4 lavash bread sheets or 5 flour tortillas (10-inch size)

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients and chop your veggies into little bite-sized pieces.
  2. Mix the Creamy Filling: In a large mixing bowl, combine the softened cream cheese, sour cream, ranch seasoning mix, and dried dill weed until smooth.
  3. Add the Cheese: Stir in the shredded cheddar cheese into the cream mixture.
  4. Prepare the Tortillas or Lavash: Lay your tortillas flat on a clean surface, and lightly moisten lavash if using.
  5. Spread the Filling: Evenly spread about a quarter of the creamy mixture onto each tortilla, leaving space around the edges.
  6. Add the Veggies: Sprinkle your chopped vegetables evenly over the cream cheese mixture.
  7. Roll It Up: Starting at one end, carefully roll the tortilla into a tight log, tucking in the sides.
  8. Slice and Serve: Once rolled, slice your log into bite-sized pieces and arrange them on a platter.

Notes

These roll-ups can be made up to 24 hours in advance. Wrap tightly and refrigerate. Slice just before serving for freshness.
