Nectarine Salsa

A fresh and flavorful Nectarine Salsa perfect for summer gatherings, grilled meats, tacos, or enjoyed with tortilla chips.

  • 23 nectarines, diced (about 2 cups)
  • 1 tomato, diced (about 1 cup)
  • 1 cup cilantro, minced
  • 1/4 cup shallot, diced (or substitute red onion)
  • 1 bird’s eye chili, seeds removed, finely diced
  • 1 tablespoon lime juice (plus more to taste)
  • 1 teaspoon honey or sugar

Instructions

  1. Prep the ingredients by gathering and dicing your nectarines, tomatoes, shallots, and chili.
  2. Mix the diced nectarines, tomatoes, minced cilantro, shallots, and finely diced chili in a large mixing bowl.
  3. Add lime juice over the mixture, starting with one tablespoon and adjusting as needed, and then add the teaspoon of honey or sugar.
  4. Season to taste and adjust with more lime, salt, or sweetness as desired.
  5. Let the salsa chill in the fridge for about 30 minutes for the flavors to meld.
  6. Serve in your favorite bowl, garnished with fresh cilantro leaves.
