No-Bake Blueberry Chia Seed Pie

A delightful and nutrient-packed no-bake pie featuring blueberries and chia seeds, perfect for summer days.

  • 1 cup fresh or frozen blueberries
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup yogurt (optional)
  • 1 cup graham cracker crumbs or nut crust
  • 1/4 cup melted butter or coconut oil

Instructions

  1. Combine your crust ingredients: In a mixing bowl, combine your graham cracker crumbs or nut crust with the melted butter or coconut oil. Mix until it’s moistened and crumbly.
  2. Press into the pie pan: Firmly press the mixture into the bottom and slightly up the sides of a 9-inch pie pan.
  3. Blend the blueberries: In a blender or food processor, combine the blueberries, chia seeds, maple syrup or honey, vanilla extract, and yogurt if using. Blend until smooth, about 30 seconds.
  4. Let it sit: Pour the blueberry mixture into the crust and spread it evenly. The chia seeds will thicken the filling as it rests.
  5. Chill out: Once set, carefully slice the pie into pieces.
  6. Top each slice with extra blueberries or a dollop of yogurt.

Notes

For added flavor, sprinkle lemon zest over the pie before serving. This pie can be customized with various fruits or nuts.
