  • 1/4 Cup Fresh Lime Juice
  • 1/2 Cup Chia Seeds
  • 2 Tablespoons Honey or Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • Pinch of Salt
  • Fresh Fruit for Topping (Optional)

Instructions

  1. Mix the base: In a mixing bowl, combine your coconut milk and fresh lime juice. Whisk them together until they’re well combined.
  2. Sweeten the deal: Add in your honey or maple syrup and vanilla extract. Whisk again until everything is mixed and the sweetener is fully dissolved.
  3. The magic touch: Sprinkle the chia seeds over your mixture and give everything a good stir. The chia seeds will soak up the liquid and create a wonderful pudding-like texture.
  4. Chill out: Cover your bowl and pop it into the fridge. Let it chill for about 30 minutes.
  5. Check the consistency: After your chia mix has firmed up a bit, give it a stir. If it seems too runny, let it sit for another 10 minutes. If it’s too thick, add a splash of coconut milk.
  6. Transfer to a pan: Line an 8×8 inch square pan with parchment paper. Pour your chia mixture into the pan and spread it out evenly.
  7. Let it set: Cover the pan and return it to the fridge, letting it set for at least 2 hours or overnight.
  8. Slice and serve: After it’s set, remove the chia pudding from the pan using the parchment paper. Slice into bars and serve them topped with your choice of fresh fruits.
