  • 1 cup unsalted butter, softened
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup creamy peanut butter (for frosting)
  • 4 cups powdered sugar
  • 1/4 cup milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Combine dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy—about 3-4 minutes.
  4. Add the peanut butter and mix until fully incorporated.
  5. Incorporate the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.
  6. Alternate adding the dry mixture and the buttermilk, starting and ending with the dry ingredients.
  7. Divide the batter evenly into the prepared cake pans and bake for 25-30 minutes.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Whip the frosting by beating the creamy peanut butter and powdered sugar until combined, then add milk to reach desired consistency.
  10. Assemble by spreading frosting between the layers and on top and sides of the cooled cakes.
