Pumpkin Bread Truffles

Indulge in delightful bite-sized treats made from leftover pumpkin bread, cream cheese, and white chocolate.

  • 2 cups pumpkin bread, crumbled
  • 4 oz cream cheese, softened
  • 1 cup white chocolate chips
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup crushed nuts (optional)
  • Sprinkles for decoration (optional)

Instructions

  1. Crumble the pumpkin bread into a large mixing bowl until it resembles breadcrumbs.
  2. Mix in the softened cream cheese until smooth and combined.
  3. Add cinnamon and nutmeg, incorporating them thoroughly into the mixture.
  4. Shape the mixture into small balls (about a tablespoon each) and place on a parchment-lined baking sheet.
  5. Chill the truffles in the fridge for about 30 minutes.
  6. Melt the white chocolate chips in a microwave-safe bowl until smooth.
  7. Coat each truffle in the melted white chocolate and return to the parchment-lined sheet.
  8. Decorate with sprinkles or crushed nuts while the chocolate is still wet. Let set for about 30 minutes.

Notes

These truffles can be made ahead of time and stored in an airtight container in the fridge for up to a week.
