Easy Pumpkin Protein Balls

Delicious, nutritious pumpkin protein balls that are easy to make and perfect for snacking.

  • 1 cup rolled oats (gluten-free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (or maple syrup for vegan)

Instructions

  1. Mix the dry ingredients: Combine the rolled oats, protein powder, and pumpkin pie spice in a large mixing bowl.
  2. Combine the wet ingredients: In a separate bowl, mix the almond butter, pumpkin puree, and raw honey until smooth.
  3. Combine dry and wet mixtures: Pour the wet mixture into the dry ingredients and mix until evenly combined.
  4. Chill the mixture: Cover and refrigerate for about 30 minutes.
  5. Form the protein balls: Use your hands to roll the mixture into balls about 1 inch in diameter.
  6. Chill again (optional): Place the balls on a baking sheet and refrigerate for another 20 minutes for better shape.
  7. Enjoy! Store in an airtight container in the fridge for up to a week.

Notes

These pumpkin protein balls can also be frozen for up to three months. They are versatile and can be enjoyed on their own or paired with smoothies.
