Decadent Strawberry Cheesecake Cups

These creamy Strawberry Cheesecake Cups are a delightful treat, perfect for summer gatherings. Easily portioned and deliciously simple to make, they combine a buttery graham cracker crust with a light cheesecake filling and fresh strawberry sauce.

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 cup whipped cream
  • 1 cup strawberries, pureed
  • 2 tablespoons sugar (for strawberry sauce)
  • Fresh strawberries for garnish

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.
  2. Spoon about 2 tablespoons of the crumb mixture into the bottom of each serving cup or glass. Press it down gently.
  3. Beat the softened cream cheese with sugar until smooth and creamy.
  4. Fold the whipped cream into the cream cheese mixture until fully combined.
  5. Incorporate 1 cup of pureed strawberries into the cheesecake filling.
  6. Layer the cheesecake filling on top of the crust in each cup.
  7. Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
  8. Cook the remaining pureed strawberries with 2 tablespoons of sugar in a small saucepan for about 5 minutes to make the sauce.
  9. Serve and garnish with strawberry sauce and fresh strawberries on top.

Notes

These cups can last about 2-3 days in the fridge if covered. Try using frozen strawberries for convenience, just thaw and drain them well before use.
