Strawberry Crunch Cheesecake

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 cup whipped cream
  • 1 cup crushed freeze-dried strawberries

Instructions

  1. Prepare the crust by combining graham cracker crumbs and melted butter, then press into a springform pan and bake at 350°F for 10 minutes.
  2. Mix cream cheese and sugar until smooth, then add vanilla extract and eggs one at a time.
  3. Add the strawberry puree to the cream cheese mixture and fold gently.
  4. Pour the filling over the cooled crust and bake at 325°F for 1 hour.
  5. Cool the cheesecake in the oven for 1 hour, then refrigerate for at least 4 hours.
  6. Top with whipped cream and crushed freeze-dried strawberries before serving.
