Ultimate Banana Crumb Cake

A deliciously simple Banana Crumb Cake that’s moist and topped with a crunchy crumb, perfect for using up ripe bananas.

  • 3 ripe bananas, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking pan or line it with parchment paper.
  3. Mash the bananas in a mixing bowl until smooth, leaving some small chunks.
  4. Cream the butter and sugar together in a separate bowl until fluffy (2-3 minutes).
  5. Add the eggs and vanilla to the butter mixture and mix until combined (about 1 minute).
  6. Combine the dry ingredients (flour, baking soda, salt, cinnamon) in another bowl.
  7. Mix the wet and dry ingredients gently until just combined.
  8. Fold in the mashed bananas until no large lumps of dry flour remain.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Make the crumb topping by mixing brown sugar, flour, and cinnamon, then add butter until crumbly; sprinkle over the batter.
  11. Bake for 30-35 minutes or until a toothpick comes out clean.
  12. Cool the cake in the pan for 10 minutes before transferring to a wire rack.

Notes

For a nutty twist, consider adding walnuts or pecans. You can also swirl in some chocolate chips for an extra treat!
