Cream Cheese Banana Bread

  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9×5-inch loaf pan.
  3. Mash the ripe bananas in a medium bowl until smooth.
  4. Cream the softened butter and cream cheese until light and fluffy.
  5. Add the sugar and mix well, then incorporate the eggs one at a time and mix in the vanilla extract.
  6. Whisk together the flour, baking soda, and salt in another bowl.
  7. Combine the dry ingredients into the creamed mixture along with the mashed bananas and mix until just combined.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
  11. Slice and enjoy warm!

Notes

For a richer flavor, consider adding chocolate chips or nuts. This banana bread can be frozen for up to a month.
