Lemon Cake Mix Cookies

Delightful lemon cookies that are easy to make and perfect for any occasion, bringing a burst of sunshine to your day.

Ingredients

  • Lemon cake mix – 1 box (15.25 oz)
  • Cream cheese, softened – 4 oz
  • Unsalted butter, softened – ¼ cup
  • Egg, room temperature – 1 large
  • Vanilla extract – 1 teaspoon
  • Powdered sugar – ½ cup (for rolling)
  • Butter – 2 tablespoons (for glaze)
  • Powdered sugar – 1 cup (for glaze)
  • Milk – 2–3 tablespoons
  • Vanilla extract – ½ teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix the softened cream cheese, butter, and lemon cake mix in a large bowl until fluffy.
  3. Add the egg and vanilla extract, beating until fully incorporated.
  4. Scoop golf ball-sized amounts of dough and roll them in powdered sugar.
  5. Bake for 8-10 minutes or until the edges are lightly golden brown.
  6. Whip together the butter, powdered sugar, vanilla, and milk for the glaze until smooth.
  7. Glaze the cooled cookies with the glaze.
  8. Enjoy! Allow the glaze to set before serving.

Notes

These cookies can be frozen unbaked and baked directly from the freezer. Great for making ahead and storing in an airtight container for up to a week.
