  • 1 cup sugar
  • 2 eggs
  • 1/2 cup mashed ripe banana
  • 1/3 cup drained crushed pineapple
  • 1/2 cup sweetened flaked coconut
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 to 1 teaspoon pineapple extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  3. Combine the softened butter and sugar in a large mixing bowl and cream together until light and fluffy—about 3-4 minutes.
  4. Beat in the eggs one at a time, incorporating each fully.
  5. Fold in the mashed banana and crushed pineapple until well-mixed.
  6. Whisk together the all-purpose flour, baking powder, baking soda, salt, and coconut in another bowl.
  7. Gradually add the dry ingredients to the wet mixture and mix just until combined.
  8. If using pineapple extract, fold it in now.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove from the oven and allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure to drain the pineapple well to avoid excess moisture. You can add nuts or chocolate chips for extra flavors.
