Caribbean Chicken and Rice

A vibrant and hearty dish combining juicy chicken, aromatic spices, and creamy coconut milk, perfect for weeknight dinners.

Ingredients

  • 2 chicken breasts, diced
  • 1 cup rice
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tsp curry powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Sauté the aromatics in a large skillet with olive oil, stirring for about 5 minutes until soft.
  2. Add garlic and chicken; cook until browned on all sides, about 6-8 minutes.
  3. Sprinkle in the curry powder and thyme, cooking for another minute.
  4. Pour in coconut milk and chicken broth, bringing it to a simmer.
  5. Add rice and a pinch of salt; cover and simmer for 15-20 minutes.
  6. Fluff with a fork and let sit covered for 5 minutes.

Notes

For variations, add jalapeños for heat or pineapple for sweetness. Can substitute chicken for chickpeas or shrimp.
