Chicken Garlic Parmesan Pasta

A creamy chicken pasta dish that’s simple enough for weeknight dinners and impressive enough for gatherings.

  • 8 oz pasta (like fettuccine or penne)
  • 2 chicken breasts, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a boil. Add in the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water and drain the rest.
  2. Sauté the Chicken: Heat the olive oil in a large skillet over medium-high heat. Add diced chicken breasts, seasoning with salt and pepper. Cook until golden brown and fully cooked, about 5-7 minutes.
  3. Sauté the Garlic: Lower heat to medium, add minced garlic, and sauté for about 30 seconds until fragrant.
  4. Add the Cream: Pour in the heavy cream, stirring to combine. Let simmer for a couple of minutes, adding reserved pasta water for a creamier sauce.
  5. Incorporate the Parmesan: Gradually stir in grated Parmesan cheese until melted, creating a smooth sauce.
  6. Combine Everything: Add the sautéed chicken back to the skillet and gently fold in drained pasta. Adjust seasoning if needed.
  7. Serve Hot: Remove from heat, serve immediately, garnished with chopped parsley.

Notes

Add veggies like broccoli or spinach for extra nutrition. For a spicy kick, include red pepper flakes or jalapeño. Experiment with flavors by adding lemon zest or basil pesto.
