Cowboy Butter Potatoes

Crispy, tender potatoes coated in a rich, buttery sauce with garlic and spices, perfect as a side dish.

  • 680 g red baby potatoes, halved
  • To taste salt
  • To taste freshly ground black pepper
  • 56 g unsalted butter, melted
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon paprika or smoked paprika
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the red baby potatoes under cold water and cut in half.
  3. Add the halved potatoes to a large bowl; drizzle with olive oil, salt, and pepper.
  4. Toss to coat the potatoes evenly.
  5. Spread the seasoned potatoes in a single layer on a baking sheet.
  6. Bake for 30-35 minutes, flipping halfway, until golden brown and fork-tender.
  7. Melt the unsalted butter in a small saucepan; add minced garlic and sauté for about a minute.
  8. Stir in Dijon mustard, lemon juice, parsley, paprika, and crushed red pepper flakes until smooth.
  9. Drizzle the Cowboy Butter Sauce over the roasted potatoes and toss gently to coat.
  10. Transfer the potatoes to a serving dish and garnish with fresh lemon juice and parsley.

Notes

For a dairy-free option, substitute unsalted butter with olive oil. You can experiment with spices based on your preference.
