Easy Greek Lemon Potatoes

A flavorful journey to the Mediterranean with these aromatic and zesty Greek lemon potatoes, perfect for any occasion.

  • 2 pounds potatoes, peeled and cut into wedges
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon freshly ground pepper
  • 1 cup low-sodium vegetable broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the peeled and wedged potatoes in a large bowl.
  3. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in another bowl.
  4. Pour the marinade over the potatoes and toss gently.
  5. Pour the vegetable broth into a baking dish and arrange the potato wedges in a single layer on top.
  6. Place the dish in the preheated oven and roast for about 45 minutes.
  7. Once done, let the dish sit for about 5 minutes before serving.

Notes

For a twist, try adding cherry tomatoes and olives before roasting or toss in some grated Parmesan cheese before serving.
